The fan will keep on going for a while after turning off the engine if it is hot, this can be for many reasons ie a long drive at speed, the weather being hot, ect..
if the car is new it will probably be because the engine is tight, this will cause the engine to run hotter because there is more friction. When an engine is new the cylinder bores, piston rings and some bearings have to wear a very small amount to get to their optimum sizes, this is what is happening when you run the car in, during this time the engine can run a bit hot.
